hey guys
so another baking blog post
so i kind of bake like every week..usually on the weekends. and i bring some in for my uni friends…who all appreciate it. =D and also my family of course.
yes it is therapeutic and i LOVE trying new recipes
but it also tastes yum!!!
perhaps i am giving everyone diabetes… (i hope not…diabetes is not a joke)
so here goes…
NB: the recipes that don’t have links are from the Hummingbird Bakery Recipes books or i couldn’t find a link
Cinnabon Style Baked Doughnuts
since i found the recipe of course i had to try it ASAP. i mean the cream cheese frosting is beyond delicious and i added some nuts for a perfect finish.
Chocolate Chip Cookie Dough Brownies
there are RIDICULOUSLY SUGARY and like should be illegal. but they taste yum.
Maple and Pecan Muffins
this is the first time i made muffins and i DIDN’T REALISE HOW EASY IT IS. also…maple syrup is EXPENSIVE. but anything with pecans is fab. i hope to make a maple and pecan loaf cake soon. these got eaten really quickly.
Buttermilk Pound Loaf Cake
every1 loves a plain and simple cake. as soon as i made it every1 satrted picking ta it and then were like ”MMMMM…more!!’. it’s perfect with a nice cup of tea or just on its own.
Chocolate Melting Moments with Nutella
these are also really easy to make and are very rich but tasty.
Carrot Cake
so my friend requested me making a carrot cake and i always thought it’d be kinda difficult but surprisingly easy to make. THREE LAYERS OF PURE GOODNESS. and the walnuts. and i used a lot of carrots. it’s not dry at all. it’s just beautiful. and every1 who ate it LOVED it (even if they don’t usually like carrot cake)
Reese’s Choc Chip Cookies
reese’s peanut butter cups are one of the greatest inventions. and in cookies. oh it is delicious. i found mini cups online but if you live in the US you can get them in stores. i chopped the pieces and added them to the dough.
Baked Nutella Doughnuts with Nutella Glaze
anything nutella is perfect. these doughnuts are lovely and chocolatey and the nutella glaze is just so hgjfkhkjfhgkjdfn
Chocolate Muffins with Peanut Butter Chips (i added the PB Chips)
2nd attempt at muffins. choc muffins- simple and yummy.
Toasted Marshmallow Nutella Chocolate Chip Cookies
nutella and marshmallow. perfect combo. the marshmallow make sit gooey and the nutella makes it soft. the bsicuit itself was a bit over baked but that added that perfect balance of crispness.
this is one of my fave things to bake for guests as it is SUPER EASY especially if you have an icing set (which you NEED). and the chocolate ones are the best. every1 loved them. it’s a no hassle tea tie treat. =)
Chocolate Fudge Brownies with Peanut Butter Chips
oh. my. glob. these are soooo rich and PERFECT with a scoop of ice cream and just OMG that rich chocolate mixed with the Peanut butter chips oh it’s glorious.
so one f my friend’s said she likes oreo cheesecake so i made mini oreo cheesecakes for her b.day. it’s actually quite easy and TASTES AMAZING. it’s like cream cheesey and oreos and just wonderfully oreotastic.
there was more than enough for 24 mini cheesecakes so i made a whole one too…
so i saw this video
and i was like OMG IS IT THAT EASY??? i need to make this. so i did. they’re honestly best after they set in the fridge and even a day later. but that burst of fresh cream and the melted chocolate oh it is yummy. sadly the recipe only makes about 12 so they disappear pretty fast!!!
Vanilla Cupcakes with Mock Cream
my brother wanted plain cupcakes and this is my go to recipe. of course i had to go overboard on the sprinkles and sparkles. coz that’s just who i am.
Reese’s Cup Cookies with PB Drizzle
so i made the other reese’s cookies earlier…BUT THESE…THESE ARE THE BEST. THESE ARE THE ONE. my friend came over and we baked cookies at night (coz we’re so gangsta…) and idek what to say other than f you love peanut butter and if you love cookies and reese’s pb cups then MAKE THEM AND EAT THEM. i used the mini cups again but this time A WHOLE ONE.
one day i got up and decided i want to bake something quick and easy. now usually when i bake i am prepared (take the butter out in the night so it is soft) so i was looking for something that used melted butter. and then i was like OH YES I WANNA TRY CHURROS. so i made them and it’s pretty much choux pastry. also they didn’t last long because they were so good. =D
Lemon Drizzle Loaf Cake
my mum loves lemon and lemon drizzle cake and so i made this for Mother’s Day. i tried a piece and it was too lemony for me. i don’t really like lemon cakes but she enjoyed it. =D
Cinnamon Rolls
so i made these for my mum’s birthday. and it literally took all day because of the proving etc…
this was my first time making anything with yeast. but it was fun.
and the end result OH MY GOSH THESE ARE AMAZINGLY DELICIOUS. i mean they’re not so sweet which why they’re better than cinnabon and they got eaten quickly! this recipe made about 2 cake tins full of buns. so you roll it and then cut it and place it in a cake tin and then when it’s done you gut the bun etc. and the icing…oohhh… so good!!!
i bribed my brother by telling him if he watched Catching Fire with me i’ll make him eclairs. =P
he actually enjoyed the film!!! yay. and the eclairs are bit harder to make than the profiteroles. but they were still perfectly delicious.
i made this for my friend’s birthday. she really enjoyed it. =D
Banana Boston Cream Cake
i didn’t know what to make for my dad’s birthday. he wanted like a pudding cake or something idk but i was like really? so i showed him one of the Humingbird Bakery recipe books and he saw this and said CUSTARD YES THIS IS IT. i made a face coz it didn’t really sound that nice but hey ho it’s not my birthday. so i made this and it’s actually quite nice. the banana flavour isn’t too strong and the custard isn’t that much so it’s okay.
Gooey Chocolate Oreo Crunch Butter Cake
i asked my friend what she wanted me to bake for her birthday and she said something with oreos. so i found this recipe a while ago and was waiting for an occasion to make it since i knew it’d be big. and this was it. it is glorious. super chocolatey and rich. and just wonderful. it’s also fun to bake!!! it’s actually like three layers. there is a base layer which is the crust and then the gooey layer and then oreos and then the top which is melted chocolate and peanut butter. so maybe 4 layers? but it is SO YUMMY!!! it needs to set though so rather bake it a day early.
and then…
anyways that’s it for now. i’ll probably be baking some cookies throughout revision and exam season to keep be going.
and once that’s over i’ll resume my my baking adventures….i recently bought a pie pan so i hope to make pies and try some bun/bread recipes and of course more cake recipes!!!
i also discovered these 2 amazing blogs:
so till the next time
and HAPPY BAKING!!! don’t be scared…just make sure if MEASURE everything accurately and follow the recipe and you should be fine. also if you don’t live in the US…when following US recipes make sure you CONVERT temperatures and certain ingredients (flour, sugar, etc) as there are different kinds!
baking is fun and SHOULD be fun. not stressful. so don’t make it harder for yourself.
have fun!
